And I am one happy leprechaun.
When this little jar arrived in the mail, the first order of business was a frying-pan-free BLT. Verdict: a little sweet, a little sour, and plenty of bacon. Thought: I will be eating a lot more BLTs.
Then after a particularly sweaty yoga class: English muffin scraped with bacon marmalade, topped with thick cut tomato, avocado and two (perfectly, if I do say so myself) poached eggs.
Thought: this is at least half the reason I do yoga.
What next? How about on top of deviled eggs, or scallops? Or pairing it with fig jam on a square of cheddar? A spoonful on softly scrambled eggs gussied up with truffle salt would be weekend heaven. The slightly sugary, vinegary tang would compliment roasted Brussel sprouts, or escarole wilted on olive oil. Let’s not overlook the wonders it could do to homemade pizza.
