Here’s a great tip from my sister-in-law: Before mixing your guacamole, marinate diced onion in lemon or lime juice for 45 minutes or so. The juice softens the onion and imbues the whole dip with limey goodness.
As you can see in the picture below I also like to add a dash of chipotle or hot sauce, since I don’t often have hot peppers on hand. Omit the garlic for an even brighter taste; there’s plenty of garlic in salsa anyway. I prefer a chunky texture and avoid whipping it into a smooth cream.
