Claw-Hold-on-Summer Salad

Thought it’s technically fall, this week’s CSA produce delivery is seasonally torn. Apples, potatoes and eggplant rub elbows with the last of the tomatoes, peaches and watermelon. Last night the ingredients amalgamated into an undoubtedly summer-centric salad: watermelon, peach, tomato and basil dotted with creamy goat cheese and grilled chicken.

Here’s to one last hurrah before we dive into soups, stews and chilis.

Claw-Hold-On-Summer Salad

Slice 1/2 a small watermelon, 3 tomatoes, 1 peach into similar sized pieces. Toss with 1/4 cup julienned basil, 2 tbsp olive oil, and a dash of white balsamic vinegar. Season with salt and pepper. Mound onto plates, dot with soft goat cheese and top with grilled chicken.
